This recipe was actually developed by my 12 year old who has a penchant for good tasty food! For a nice and crispy wing, a dutch oven or extra large pot is a must!
Charlie's Chicken Wings:
Ingredients
Vegetable oil for frying, about 8 cups
40 chicken wings
2 cups all-purpose flour
4 tablespoons cornstarch
2 eggs
1/4 cup milk
Honey Garlic Sauce:
1/2 cup honey
1/3 cup water
4 tablespoons soy sauce
4 cloves garlic, roughly chopped
1/2 tablespoon ground ginger
1 teaspoon cornstarch
1/2 teaspoon chilli flakes
Seasoning salt, to taste
Heat the oil!
Fill a large heavy pot halfway up with vegetable oil and cover with lid.
Heat oil on medium heat, this will take a while so be patient.
Make the honey garlic sauce!
3) To a small saucepan add the honey, water, soy sauce, garlic, ginger, cornstarch and chilli flakes.
4) Using a whisk, whisk until combined.
5) Cook the sauce on medium low heat for 15 minutes, stirring every two minutes.
6) Carefully strain sauce through a mesh sieve, removing the garlic chunks. Set the honey garlic sauce to the side until you are ready to use.
Make the chicken wings!
7) In a shallow dish, add the flour and cornstarch. Whisk to combine.
8) In a medium sized bowl, add the eggs and milk. Whisk to combine.
9) Working with 10 wings at time, dunk them in the egg wash then roll them in the flour mixture, coating the wings completely with flour.
10) Place the coated wings on a baking sheet.
11) Test to see if you oil is hot enough by dipping the tip of a chicken wing into the oil, if the oil sizzles, it is ready. DO NOT TEST OIL WITH WATER.
12) Carefully lower the wings into the hot oil and cook for nine minutes, until golden brown.
13) Remove the chicken wings and place them on a second baking sheet lined with paper towel.
14) Once all of the wings are cooked, put them in a large bowl and pour the honey garlic sauce over them.
15) Sprinkle the wings with season salt and toss the wings around in the bowl, coating them evenly with sauce and salt.
16) Enjoy!
