Maple Salmon Salad

Maple Salmon Salad


It's maple season in Canada and this bright salad makes us smile. The mix of sweet strawberries, salty feta and crunchy pecans are a perfect match for a gorgeous piece of fish. Enjoy this maple salmon salad!


Marinate the salmon!


glug of olive oil, about 2 tablespoons

glug of maple syrup, about 1 tablespoon

squirt of soy sauce , about 1 teaspoon

1 garlic clove, finely chopped

spoonful of grainy dijon mustard, about 1 teaspoon

pinch of ground ginger, salt and pepper, about 1/4 teaspoon each

2 portions salmon


In a shallow baking dish mix everything together. Add the salmon, skin side up to the dish. Let the salmon marinate for 20 minutes to an hour.


Make the salad dressing!


1/3 cup of olive oil

splash of balsamic vinegar, about 2 tablespoons

splash of maple syrup, about 1 tablespoon

1/2 teaspoon of grainy dijon mustard

salt and pepper to taste


To a jam jar add all of the ingredients. Secure the lid tightly and shake until blended.


Make the Salad!


couple large handfuls baby spinach

1/2 cup of strawberries, sliced

1/4 cup of feta, crumbled

1/4 of pecans, chopped


Grill the salmon portions for four minutes per side on med-high heat. Remove skin and allow to cool. To a plate add a big handful of baby spinach, sliced strawberries, feta cheese and pecans. Place a salmon portion on top and drizzle with dressing. Season with salt and pepper to taste. Enjoy!
