Easy-Peasy Lemon Pies

Easy-Peasy Lemon Squeezy. Here is our recipe for our easy-peasy lemon pies. Super cute and super simple to make!

Ingredients:

Cookie Crust:

20-24 graham crackers, crushed into crumbs

1/4 cup golden yellow brown sugar

1/2 cup white sugar

1/2 cup salted butter, melted


Lemon Pie Filling:

1 can sweetened condensed milk

5 egg yolks

1/2 cup fresh lemon juice


Marshmallow Fluff Topping:

2 egg whites

1 cup light corn syrup

1/2 teaspoon vanilla extract

1/4 cream of tartar

2 tablespoons of sugar


  1. Make the cookie crust by adding the graham cracker crumbs, white sugar and brown sugar to a large bowl. Mix to combine.

  2. Slowly drizzle with melted butter and mix till mixture resembles wet crumbs.

  3. Divide between tart/pie tins and press down on sides and bottom making a crust. Set tins aside.

  4. To a second large bowl add the sweetened condensed milk, egg yolks and lemon juice. Using an electric mixer beat until smooth. Divide the filling evenly amongst the tins. Bake at 375 for about 15 minutes, until filling is set.

  5. To make the marshmallow topping, add all of the ingredients to a large bowl and using an electric mixture and beat until stiff peaks.

  6. Dollop each cooled mini pie with marshmallow fluff and using a kitchen torch or the broiler setting of your oven, torch marshmallow fluff until golden.
